

Tapas, meaning ‘to cover’, has its roots in Spain where centuries ago small offerings of dried meats and breads were used to cover the glasses of beer and wine keeping them free of impurities. Over time the food offerings became more and more elaborate in order to attract customers. Originated as neighborhood gathering places to meet friends and pass the latest news or opinions these Tapas Bars bustled with workers on morning and afternoon work breaks. The ‘small plates’ of food allowed them to return to work refreshed, rather than slowed from a full heavy meal.
Today there are over 7,000 Tapas bars in Seville alone and this friendly approach to fine dining can be found around the world. Tapas are easily shared at the table or eaten individually and we offer some larger plates for those with a heartier appetite.
So here at Flats the tradition continues - a spectrum of interesting foods, an intimate setting, our award winning wine selection, and craft beers on tap. Everything possible is made fresh from scratch, including our dressings, sauces and desserts, using organic and local products whenever possible (show recent menu).
